Ingredients: ( 4 portions )
One lt. beef stock
2 tablespoons butter
Salt and pepper
5 - 6 pieces of stale bread
120 gr. green lentiles
Fifty gr. flour
Oil for frying
Pick over and wash lentils, add water to cover and bring to boil. Cover and simmer until the liquid is absorbed. Gradually add the hot beef stock and filter or place through an electric mixer. Melt the butter, add the flour and stir over medium heat for one or two minutes, steadily add the soup. Cover and let simmer for Ten minutes. Garnish the soup with croutons fried in some oil.
